Frozen Burritos

Did you know you can make your own frozen burritos?  Here is my recipe:

  • 1lb ground beef
  • 1 can kidney beans
  • 1 can Ro-Tel tomatoes & chiles
  • 1 medium onion, chopped
  • chili powder
  • ground cumin
  • paprika
  • 12″ flour tortillas

Brown & drain beef.  Mix in onions and cook.  Add in remaining ingredients (except tortillas).  Cook a few more minutes to thicken.

Heat tortillas in microwave until flexible.  Scoop out 1/2 cup of filling.  Roll up burrito.  Wet your fingers with water and rub outside of the burrito to make it somewhat wet.  This will stop it from drying out when you nuke it.  Place each pair of burritos into a ziploc bag (keep them separated).  Seal bag and put in freezer.

To serve, toss it onto a plate and microwave it on high for 90 seconds or so.  Once made, they are just as convenient as those nasty things you find at the gas station, but much, much better!  Also better for you – I calculated this recipe at 500 calories (as best I can remember – it has been a few years).
